Ingredients:
  • Watermelon Rind - tough green skin removed and cut white portion into ½ inch pieces - Half Cup
  • Cumin & Mustard Seeds
  • Ginger & Garlic Paste
  • Salt & Spices
  • Amchoor Powder
  • Sugar - Half Spoon
  • Oil
Instructions:
  • Add oil in a pan on medium heat.
  • Add cumin & mustard seeds. Once they begin to splutter, add the ginger garlic paste.
  • Now add salt & spices. Saute them well.
  • Add the watermelon rind pieces and 1 spoon water and mix well. Watermelon rind has majorly water content so no need to add much water.
  • Cover and cook for 10-12 minutes, stirring in between.
  • Once rind is soft & water is absorbed properly, remove the lid & cook it for few more minutes on low flame.
  • In the end, add little amchoor powder & sugar.
  • Serve with paratha.
