Ingredients:
- Watermelon Rind - tough green skin removed and cut white portion into ½ inch pieces - Half Cup
- Cumin & Mustard Seeds
- Ginger & Garlic Paste
- Salt & Spices
- Amchoor Powder
- Sugar - Half Spoon
- Oil
Instructions:
- Add oil in a pan on medium heat.
- Add cumin & mustard seeds. Once they begin to splutter, add the ginger garlic paste.
- Now add salt & spices. Saute them well.
- Add the watermelon rind pieces and 1 spoon water and mix well. Watermelon rind has majorly water content so no need to add much water.
- Cover and cook for 10-12 minutes, stirring in between.
- Once rind is soft & water is absorbed properly, remove the lid & cook it for few more minutes on low flame.
- In the end, add little amchoor powder & sugar.
- Serve with paratha.
