Cucumbers consist of 95% water and this makes them an ideal hydrating and cooling food. Cucumbers have anti-inflammatory flavonol called fisetin that appears to play an important role in looking after your brain health. There are polyphenols called lignans in cucumbers that may help to reduce the risks of breast, uterine, ovarian and prostate cancers.

The cucumber extract helps to reduce unwanted inflammation. It does so by inhibiting the activity of pro-inflammatory enzymes. Being low in calories and high in fiber, cucumbers are ideal for both weight loss and digestive health.

Ingredients:

  • 1 Cucumber,chopped 
  • 1 large fennel bulb, thinly diced
  • 1 avocado - pared, pitted, and diced
  • 1/2 red onion, finely chopped
  • Pickled banana peppers, diced, 1/2 cup
  • 1 bunch cilantro, chopped
  • Honey, 2 tablespoons
  • Fresh lemon juice, 3 tablespoons
  • Pepper and salt to taste

Method:

  1. Mix together pepper, salt, lemon juice, honey, cilantro, banana peppers, red onion, avocado, fennel and cucumber in a mixing bowl.

  2. Let the mixture to rest for at least twenty minutes before you serve it.
