- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 2 large bunches spinach (stemmed, washed and chopped)
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon ground nutmeg (Jaayephal)
- 1/2 cup milk
- 1/2 cup cream (Optional)
- Salt and pepper
- Crusty/Crispy bread
Add some olive oil, butter, and garlic to a large skillet. Put this over medium-low heat and let the butter melt and get the garlic cooking.
when the butter is melted and the garlic is fragrant (not brown at all), add in all the spinach.
Cover this and let the spinach sit down for 4-5 minutes. Then remove the cover and season the spinach with salt, pepper, red pepper flakes, and nutmeg.
Continue to let the spinach cook until most of the liquid is evaporated.
When the spinach is looking almost dry, it’s time to turn the heat down to low and add the milk and cream.
Continue to simmer the spinach for a few minutes so it can thicken a bit. Taste the finished creamed spinach. It should be almost sweet and not bitter at all.
Serve creamed spinach on a piece of crispy bread.
