Cucumber Avocado Soup Recipe
Avocados are loaded with nutrients such as vitamin C, vitamin K, vitamin B, vitamin E, and vitamin A. Avocados & Cucumber are also a good source of dietary fiber, which helps reduce the risk of heart disease, type 2 diabetes, and obesity.
Total Time (Minutes):
- Ripen Avocado cut into cubes - 1.5 Cup
- Cucumber Chunks - 1 Cup
- Half cup cream
- Minced Garlic clove - 1
- Few Mint Leaves
- Lemon Juice- 2 tbsp
- Salt & pepper to taste
- Few ice cubes
- Blend avacado cubes, cucumber, garlic, lemon juice and mint leaves in a blender. Blend all of them very well.
- Take it out in serving bowls. Add few ice cubes as well to cool it & retain the color of the avacados.
- Pour out in a bowl and add in cream, salt and pepper. Serve immediate.
