Sandwich Zucchini

Zucchini is the best source of folic acid which is known to improve and enhance the development of brain and memory by reviving the production of DNA and RNA. It is recommended for kids to eat zucchini for incredible brain health benefits.

Ingredients:
  • Zucchini Mixture (recipe is below) - 2 tbsp
  • Bread Slices cut into round/square shape - 5 to 7
  • Oil
  • All Purpose Flour/Maida - 4 Spoon
Instructions:
  • Grate zucchini in a bowl.
  • Zucchini Mixture Recipe- Heat oil in a non-stick pan, add minced garlic, onion and saute for a minute. Add grated zucchini, salt, pepper and mix well. Cook on high heat till zucchini is done.
  • Transfer this mixture into a bowl, cool to room temperature and add paneer, potato and breadcrumbs and mix well. Zucchini mixture is ready.
  • Take a bread slice & spread this mixture over the bread evenly. Sprinkle little dry maida flour over the mixture.
  • Heat some oil in the pan. Place bread slices in pan zucchini side facing downwards and shallow-fry till the underside is golden.
