Tomato Salad and Sprouts

Tomatoes are a very rich source of vitamins A and C, as well as folic acid. They also contain a number of important antioxidants, including lycopene, choline, beta-carotene and lutein.

One cup of humble chopped tomato can provide you with: 32 calories,  1g of protein, 1g of fibre, 3g sugar, 33 per cent of your daily requirement of vitamin C, 16 percent of vitamin K, 12 per cent of potassium, 7 per cent of folate, smaller quantities of copper, manganese, vitamins A/B6/B3/B1 and E, iron and zinc.

Ingredients:
  • Mustard Seeds - 1 Spoon
  • Few Chopped Curry Leaves
  • Chilled Whisked Curd - 1 Cup
  • Finely Chopped Tomato - 2 Tbsp
  • Oil - 1 Spoon
Instructions:
  • Heat oil in a pan. Add mustard seeds & curry leaves, saute them well.
  • Add chopped tomatoes. Turn off the flame & stir well.. Do not overcook them. We don't need to mash them.
  • Take it out in a glass bowl & let it cool. Add whisked curd in it. Add salt & pepper according to taste. Mix well.
