Bottle Gourd or Ghiya Pickle is a simple, spicy chutney that goes well with paratha, chpaati and dal rice. It takes only few minutes to make it. Family members make annoying faces when it comes to eat bottle gourd in gravy form then introduce this recipe to them. They will surely start to love bottle gourd.

Ingredients:
  • Bottle Gourd Pieces - 1.5 Cup
  • Raw Mango Pieces - Half Cup
  • Green Chilli - 2
  • Tamarind Pulp - 3 to 4 Spoon
  • Mustard Oil – 1 tablespoon
  • Turmeric Powder – 1 tsp
  • Red Chilly powder – 2 tsp
  • Salt to taste
  • Bay Leaf/Tejpatta - 2
Instructions:
  • Take oil in a pan & shallow fry bottle gourd, mango pieces.
  • Add tamarind paste. Saute for few more minutes. Keep Stirring.
  • Take it out in a bowl. Keep this bowl aside
  • Now in the same pan, heat oil. Temper bay leaf, mustad seeds, curry leaves, turmeric powder, red chilli powder, salt.
  • Pour this tempering over the bowl ingredients & mix well.
  • Serve it roti/rice/chwal
  • NOTE:
  • If you do not have raw mango then use amchoor powder at the time of tempering.
  • You can add little jaggery too to get khtta meetha taste.
