Ingredients:
- Sooji Rava/Semolina - 1 cup
- Sugar - 1 spoon
- Pumpkin (Grated) - 1.5 cup
- Curd - 1 cup
- Soda - 1/4 tea spoon
- Baking powder - 1 pinch
- Cashew nuts (finely chopped) - 4 to 6
- Raisins (finely chopped) - 4 to 6
- oil - 1 tablespoon
- Coriander Leaves-few
- black pepper- half spoon (optional)
- You can add grated ginger & coconut too.
Instructions:
- In a bowl, add semolina (sooji),salt, sugar, soda, grated pumpkin, cashew nuts, raisins, little ghee, chopped coriander leaves & mix it.
- Now add curd & mix it to get idli batter consistency. Now add baking powder/eno salt, give it a light mix & start making idlis immediately.
- Grease the idli moulds with oil. Pour the mixture in moulds and steam it for 10 to 12 minutes.
- Once done, allow it to cool for 2 minutes and serve hot.
