Idli Pumpkin

Pumpkins are a good source of fiber, which helps keep you feeling full and promotes healthy digestion. Pumpkin Idli is easy to do & super healthy breakfast option from South Indian Kitchen. It is prepared using grated pumpkin and idli rava.

Ingredients:
  • Sooji Rava/Semolina - 1 cup
  • Sugar - 1 spoon
  • Pumpkin (Grated) - 1.5 cup
  • Curd - 1 cup
  • Soda - 1/4 tea spoon
  • Baking powder - 1 pinch
  • Cashew nuts (finely chopped) - 4 to 6
  • Raisins (finely chopped) - 4 to 6
  • oil - 1 tablespoon
  • Coriander Leaves-few
  • black pepper- half spoon (optional)
  • You can add grated ginger & coconut too.
Instructions:
  • In a bowl, add semolina (sooji),salt, sugar, soda, grated pumpkin, cashew nuts, raisins, little ghee, chopped coriander leaves & mix it.
  • Now add curd & mix it to get idli batter consistency. Now add baking powder/eno salt, give it a light mix & start making idlis immediately.
  • Grease the idli moulds with oil. Pour the mixture in moulds and steam it for 10 to 12 minutes.
  • Once done, allow it to cool for 2 minutes and serve hot.
