Pan Roasted Sweet Potatoes Recipe

Sweet potatoes are one of the best sources of vitamin A; a medium one contains more than 100 percent of the daily recommended intake.

  • Washed & Dried Sweet Potatoes - 4
  • Oil (Olive oil is preferred)
  • Salt & Black Pepper
  • Lemon juice

  1. Peel & cut sweet potatoes into thin coin shape rounds.
  2. Heat 2 to 4 spoon oil in a pan. Add sweet potatoes & mix well to coat all sweet potatoes in oil. Saute them well.
  3. Once they turn golden brown, add salt & pepper. (You can add ginger, garlic or oregano powder too if you like).
  4. Cook for few minutes more. Allow sweet potatoes to cook until slightly soft. Keep Stirring.
  5. Sprinkle lemon juice & enjoy.
