Amritsari Kulcha Recipe

Ingredients:
- Maida/All Purpose Flour - 1 Cup
- Curd - One Fourth Cup
- Baking Soda
- Boiled Potato - 2 to 4
- Mix of roasted cumin seeds powder, black salt, salt, amchoor, garam masala, red chilli powder
- Ginger & Green Chilli Paste
- Chopped Coriander Leaves
- Butter - 2 Spoon
Instructions:
- First we need to knead dough. Mix maida, curd, salt, butter, baking soda. Crumble the mixture.
- Now adding lukewarm water, knead dough & cover it with a moist cloth. Keep it aside for half an hour.
- Stuffing Mixture - Mix boiled mashed potato, chopped coriander leaves, roasted cumin seeds powder, black salt, salt, ginger & green chilli paste, red chilli powder, garam masala.
- Pinch a ball sized dough, place stuffing in the center & bring the edges together & close it.
- Roll it (lengthwise) using using rolling pin. (Grease the chakla with oil before rolling)
- Brush with water over kulcha. Place hulcha on hot tawa (water side on tawa).
- Flip the tawa upside down and cook kulcha directly on low flame till it turns golden brown.
- Take it out from tawa with the help of spatula. Cook from both sides on low flame using chimta/tong. Cooking on low flame ensures crunchy texture.
- Apply butter & enjoy.
