Carrot and Lentil Soup Recipe

Combination of Red Lentil & Carrot is a  super healthiest choice as both are loaded with a ton of nutrients which make them extremely beneficial for your health when consumed.Red lentils are rich in proteins and minerals. Ingredients:
  • Oil - 1 tbsp
  • Onion, diced - 1 tbsp
  • Carrot, diced - 2 tbsp
  • Mix of all types of khada masala - 1 tbsp
  • Soaked red lentils - 4 tbsp
  • Vegetable stock - 1.5 litre
  • Roasted cumin seeds powder1 tsp
  • Chopped coriander to garnish
Instructions:

  1. Heat oil in a sauce pan and saute khada masala, onion and carrots for 10 minutes on medium flame.
  2. Add lentils and veg stock.
  3. Bring it to the boil on high flame and cook for 20 minutes on low flame keeping it covered until the carrots are soft & lentils are cooked.
  4. Turn off the heat. Remove all khada masala as they have released their aroma.
  5. Now blend until smooth using a hand blender untill smooth. ( be careful as it is very hot)
  6. Once blended, add salt, pepper, cumin seeds powder, coriander & bring it to one boil.
  7. Ready to enjoy.
