Total Time (Minutes): 45
  • Oil - 1 to 2 tbsp
  • Onion 2, diced
  • Carrot 500 gm, diced
  • Khada masala 1 tbsp
  • Red lentils 4 tbsp
  • Vegetable stock 1.5 litre
  • Cumin seeds 1 tsp
  • Yogurt 4 tbsp
  • Chopped coriander -few leaves

  1. Heat 1 tbsp of oil in a pan and soften the onions and carrots for 10 minutes. Add khada masala and fry for 2 minutes before adding the lentils and stock. Bring to the boil and simmer for 20 minutes until the carrots are tender and lentils soft. Season with pepper and a little salt if it needs it.
  2. Take off the heat ,let it cool and blend until smooth using a hand blender only.
  3. Heat the rest of the oil in a small pan then sizzle the cumin seeds until golden.
  4. Top each bowl of soup with a spoonful of yogurt, seasoning and a sprinkle of coriander leaves.
