Carrots are known to be extremely good for your eyes. As they are very rich in vitamin A.
- Oil - 1 to 2 tbsp
- onion 2, diced
- carrot 500 gm, diced
- khada masala 1 tbsp
- red lentils 4 tbsp
- vegetable stock 1.5 litre
- cumin seeds 1 tsp
- yogurt 4 tbsp
- chopped coriander -few leaves
Heat 1 tbsp of oil in a pan and soften the onions and carrots for 10 minutes. Add khada masala and fry for 2 minutes before adding the lentils and stock. Bring to the boil and simmer for 20 minutes until the carrots are tender and lentils soft. Season with pepper and a little salt if it needs it.
Take off the heat ,let it cool and blend until smooth using a hand blender only.
Seasoning- Heat the rest of the oil in a small pan then sizzle the cumin seeds until golden.
Top each bowl of soup with a spoonful of yogurt, seasoning and a sprinkle of coriander leaves.
