Beans and Pasta Soup Recipe

Beans are one of the healthiest foods in the world. They are nutrient-dense and fiber-rich. Adding beans with pasta can turn an incomplete protein into a complete one nutrient dense food. Beans contain several vital nutrients, including folate.

Ingredients:
  • Beans (canned) - Half Cup
  • Onion , sliced - 1 tbsp
  • Garlic cloves , sliced - Half Spoon
  • Chopped tomatoes - Half Cup
  • Tomato Puree - 2 Tbsp
  • Half Boiled Macaroni - One Fourth Cup
  • Cornflour - 1 Tbsp
  • Dried Oregano - 1 Spoon
  • Tomato Ketchup - 2 Tbsp
  • Butter - 2 Tbsp
  • Salt & Pepper - to taste
Instructions:

  1. Heat butter in a saucepan, add onion and garlic. Saute until onion turns translucent.
  2. Add tomato puree, canned beans, chopped tomatoes, macaroni and 3 to 4 cup of hot water and bring to a boil. Cook for 15 to 20 minutes on medium flame. Keep stirring in between.
  3. Dissolve the cornflour in 2 tbsp of water in another bowl and add to the soup & stir well. It gives thick consistency to soup.
  4. Add oregano, salt, tomato ketchup and pepper. Mix well.
  5. Serve hot.
