The hot crispy jalebi is loved by not only kids but adults too. People in India love to eat jalebi in breakfast. In north India, Jalebi is eaten with curd in breakfast. In Gujarat, Jalebi is often paired with Fafda, whereas in other regions it is served with Rabri.
It is always suggested to eat jalebi with one glass of milk if someone wants to gain weight. Sweetness gives full energy and milk the protein and other nutrition.

125 gm - Maida
40 gm - Urad Daal
20 gm - Ghee
One + Half spoon tsp baking soda and lemon juice
Water as required to make thick batter
500 gm - Sugar
1 Cup - Water
In a blender jar, add the urad dal. Grind the dal to a fine powder like consistency. Once done strain the dal. Set aside.
In a bowl, mix maida, urad dal powder, baking soda powder and ghee. Using your hand gently mix/rub everything.
Jalebi Batter Mixture: Add little water at a time to the mixture, using your hands to mix( not any blending equipment) & make a thick batter.
Sugar Syrup: In a saucepan combine sugar, water, yellow color/kesar. Bring it to a boil. Cook on low flame. We need syrup of thick consistency.
Let's start making jalebi: Place the piping bag in a glass and then transfer the jalebi batter in the piping bag.
Once the oil is hot, over medium flame start to pipe out the batter in a circular pattern, fry the jalebi until light golden. Flip the jalebi.
Once the jalebi are brown, take them out & directly dip in the sugar syrup. Let them soak for 30 seconds to 1 minute.
