The chickpea flour (besan) can also be used instead of wheat flour in some gravies as it blends well and imparts a nutty flavor to the dish.   • 5 tbsp gram flour (besan)
  • 1 tsp fenugreek seeds (methi dana)
  • ½ tsp asafoetida
  • 1 tsp mustard seeds
  • 1 tsp onion seeds (kalonji)
  • 1 tsp black sesame seeds
  • 1 medium onion, finely chopped
  • 4 medium tomatoes cut into big chunks
  • Ginger-garlic paste
  • Salt & Chilli Powder to taste
  • Oil

  1. Heat 2 tbsp oil in a non-stick pan, add fenugreek seeds, asafoetida, mustard seeds, onion seeds and black sesame seeds and let them splutter.
  2. Add onion and saute till translucent. Add ginger-garlic paste and mix well.
  3. Add gram flour to the pan and saute for 2-3 minutes. Add remaining oil and mix well.
  4. Saute on medium heat, stirring continuously, till the gram flour starts to change color and becomes fragrant.
  5. Add tomatoes and mix well. Drizzle 2 tbsps water in the pan and mix well. Add salt and red chilli powder and continue to cook for 10-12 minutes, stirring often.
  6. Add spring onion greens (optional) and mix again. Cook further 2-3 minutes.
  7. Serve hot with paratha.
