The chickpea flour (besan) can also be used instead of wheat flour in some gravies as it blends well and imparts a nutty flavor to the dish. Ingredients:
  • 5 tbsp gram flour (besan)
  • 6 tbsp oil
  • 1 tsp fenugreek seeds (methi dana)
  • ½ tsp asafoetida
  • 1 tsp mustard seeds
  • 1 tsp onion seeds (kalonji)
  • 1 tsp black sesame seeds
  • 1 medium onion, finely chopped
  • 4 medium tomatoes cut into big chunks
  • 1 tbsp ginger-garlic paste
  • Salt to taste
  • 2 tsps red chilli powder
Instructions:

  1. Heat 2 tbsps oil in a non-stick pan, add fenugreek seeds, asafoetida, mustard seeds, onion seeds and black sesame seeds and let them splutter. Add onion and saute till translucent. Add ginger-garlic paste and mix well.
  2. Add gram flour to the pan and saute for 2-3 minutes. Add remaining oil and mix well. Saute on high heat, stirring continuously, till the gram flour starts to change color and becomes fragrant.
  3. Add tomatoes and mix well. Drizzle 2 tbsps water in the pan and mix well. Add salt and red chilli powder and continue to cook for 10-12 minutes, stirring often.
  4. Add spring onion greens (optional) and mix again. Cook further 2-3 minutes.
  5. Serve hot with paratha.
